I mix spinach into everything, and banana makes everything taste better. I almost always have these spinach banana mini muffins in my freezer ready to serve up to my toddler and my baby.
Ingredients
1/2 c apple sauce
1 egg
2t vanilla
2 cup spinach
1 very ripe banana, mashed
1/3 c Agave
2 T coconut oil
1.5 c flour
1 t backing powder
1/2 t baking soda
1/2 t salt
Directions:
I’m not claiming to be a fancy chef. I like delicious, healthy and easy recipes, so I’ll keep the directions simple.
Preheat oven to 350 degrees
1. Blend the wet ingredients
2. Stir the dry ingredients, and mix into the wet ingredients. Be careful not over-mix.
3. Fill up mini muffin and bake at 350 for 12 – 15 minutes
